Day 17, July 16, 2011

This morning we spent some time with Corita's brother Larry and his partner Deepa at their home in Colorado Springs.  They have a lovely garden, full of summer vegetables and herbs.  David was particularly impressed with the tomato plant growing out of the bottom of this sack, so this is where we took our photo.
From Larry's house, we headed out on our drive to the Vail area.  On our way, we enjoyed the lovely Colorado mountains and we stopped for a picnic lunch at one of the state parks. 

When we got to our destination, we were amazed by its splendor.  As it claims in its brochure, "Beaver Creek... Not exactly roughing it."  In the Beaver Creek Resort, we are staying at St. James' Place (not sure what Saint James has to do with all this elegance), thanks to a friend of Kim who has a time share and could access this for us at reasonable rate.


So, while we pretend to be rich, here are our digs:

Thankfully, this condo comes fully equipped, so we can make food at home and save bundles on restaurants.  Our first evening here, we went to a culinary demonstration and sampled the chickpea dumplings made there in order to give us energy to unpack.  Then we ate an easy dinner of curried zucchini soup that Deepa had sent with us.  Thanks again, Deepa!
We wrapped up the evening with a swim in the indoor pool and a soak in the jacuzzi...ahhh!
